A good Non-Stick pan makes everyday cooking faster and cleaning easier, from fried eggs to shakshuka and quick weeknight meals. But a Non-Stick surface needs the right care to stay smooth and perform for years. These simple habits keep your pan cooking like new.
1. Cook on low to medium heat
High heat is the biggest enemy of any Non-Stick coating. Granite pans spread heat evenly, so low to medium heat is enough for eggs, vegetables, chicken and most daily meals.
2. Use wooden or silicone utensils
Metal forks, knives and spatulas leave scratches that make food start to stick. Wooden, silicone or nylon tools protect the surface.
3. A little oil goes a long way
You need far less oil than usual, but a light coat of oil or ghee protects the surface and improves browning. Avoid cooking sprays; they leave a sticky layer that's hard to remove.
4. Let it cool before washing
Putting a hot pan under cold water causes thermal shock, which can warp the pan and stress the coating. Wait a few minutes first.
5. Wash by hand with a soft sponge
Warm water, mild dish soap and a soft sponge are all it needs. Skip steel wool, rough scourers and harsh powders.
6. Loosen stuck food gently
Soak the pan in warm soapy water for a few minutes, or add a little water and warm it briefly on the stove, then wipe. Never scrape.
7. Store it with protection
If you stack pans, place a cloth or pan protector between them to avoid scratches.
8. Don't cut food inside the pan
Move food to a cutting board before slicing. A knife can damage the coating in a second.
9. Don't heat it empty for long
Add oil or food shortly after the pan warms up. Long empty heating stresses the coating.
When is it time to replace a pan?
If the coating is deeply scratched, peeling or no longer releases food, it's time for a new one.
